Fruit Crumble Recipe:

Use whatever fresh fruit you have on hand to make this old fashioned crumble.

Berries, like blueberries, strawberries and blackberries work great, but you can also use peaches or any ripe stone fruit that looks fresh at the store (or in your garden) that day.

Ingredients

2 1/2 c fresh fruit, such as blueberries, peaches, apples

1 t stevia or other substitute

3 T all-purpose flour, divided

1 T orange juice (or blueberry pomegranate juice)

1/2 c rolled oats

1/4 c chopped walnuts, or pecans

3 T brown sugar

1/4 t ground cinnamon

2 T canola oil

Preparation

Preheat oven to 400°F.

Combine fruit with stevia, 1 tablespoon flour and juice.

Divide among four 6-ounce ovenproof ramekins or one small casserole dish Combine oats, nuts, brown sugar, the remaining 2 tablespoons flour and cinnamon. Drizzle with oil and stir to combine.

Sprinkle over the fruit mixture. Place the ramekins or casserole on a baking sheet.

Bake until the fruit is bubbling and the topping is golden, 20 to 25 minutes. Let stand for at least 10 minutes before serving.
