Workout Wednesday - Curry Sweet Potato Salad

Curry Sweet Potato Salad:

2 c sweet potatoes, diced (skins on)

1 medium apple, diced

2 green onions, sliced

1/2 c celery, diced

1/4 c walnuts, chopped

1/4 c dried cranberries or raisins

1/4 c nonfat Greek yogurt

1/4 fat free mayonnaise

1/2 tsp curry powder

salt to taste

Boil sweet potatoes in salted water until fork tender and drain.

Add apple, green onions, celery, walnuts and cranberries to bowl with sweet potatoes.

In a separate bowl, mix together yogurt, mayo, curry powder and salt.

Pour dressing over potato mixture, mix well and chill.

Makes 8 servings

115 calories, 3g fat, 4g protein, 3g fiber
