Quinoa with Vegetables
1/2 cup quinoa
1 cup water or chicken stock
1 zucchini
1 yellow squash
1 red onion
1 red bell pepper
1 green bell pepper
1/4 c. extra virgin olive oil
3 T red wine vinegar
1/4 cup feta cheese
2 T honey
Cook quinoa according to package directions
Cut all vegetables in large pieces
Drizzle with olive oil, salt and pepper
Grill for 2 minutes just to get grill marks
Cut into bite size pieces
Fluff quinoa and add all cut vegetables
Add red wine vinegar, honey, olive oil, salt, pepper and feta
