Crab Escabeche
1 lump crab meat
1 bunch cilantro (chopped)
1/3 jar cactus (nopalitos)
1 recipe citrus dressing
1/3 cup pico de gallo
Procedure: Combine all ingredients in a bowl and season with salt. Allow to marinate for a couple of hours in the refrigerator before serving.
Citrus Dressing
2 oranges
2 lemons
2 limes
1/4 cup rice wine vinegar
1 1/2 tsp. honey
Procedure: Zest one of each citrus fruit and juice all of them. Chop zest and add vinegar and honey. Add to lump crab mixture.
Fried Tomatillos
1 cup AP flour
1 1/2 cup soda water
2 cups panko bread crumbs
1/2 cup Aioli in a small squeeze bottle
5 tomatillos sliced
Procedure: Make a tempura batter from the flour and soda water. Dip each slice first in batter then into Panko bread crumbs. Pan fry in oil until golden in color. Garnish fried tomatillos with crab escabeche and aioli. Serve immediately.
