Hummingbird Cake
3 cups flour 1½ cups vegetable oil
2 cups sugar 1½ teaspoons vanilla
1 teaspoon salt 1 (8 ounce) can crushed pineapple -undrained
1 teaspoon baking soda 2 cups chopped nuts
1 teaspoon cinnamon 2 cups chopped bananas
3 eggs, beaten
Preheat oven to 350. Lightly coat three 9” round cake pans with butter or vegetable oil cooking spray and dust with flour.
Combine dry ingredients in a large mixing bowl. Add eggs and oil; stir until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, nuts, and bananas.
Pour batter into cake pans. Bake for approximately 25-30 minutes. Remove from pans and cool completely. Ice with delicious cream cheese icing! Sprinkle chopped nuts on top.
Cream Cheese Icing
8 ounce package softened cream cheese ½ cup softened unsalted butter
16 ounces confectioner’s sugar 2 teaspoons vanilla
Cream butter and cream cheese together. Slowly blend in confectioner’s sugar until mixture is fluffy. Add flavor and stir.
