3/22 Coastal Cooking: Fruit Crisp

 Berry Crisp

Serves 6

Filling

6 cups Mixed Berries
½ cup Granulated Sugar
2 Tablespoons Corn Starch (sifted)
Juice from 1 Lemon
1 teaspoon Vanilla Extract

Mix all ingredients in a bowl. Divide evenly between 6 oven safe bowls or ramekins.

Topping

1 cup All Purpose Flour
½ cup Light Brown Sugar
¼ cup Granulated Sugar
½ Tablespoon Ground Cinnamon
3 ounces Cold Butter (cut into cubes)
1 cup Chopped Pecans

In the bowl of an electric mixer on medium speed, mix the flour brown sugar, granulated sugar and cinnamon until combined.
Add the butter and mix well, until the texture is crumbly.  Slowly mix in nuts.
Cover berries with the topping.  Bake on 350 degrees for 15-25 minutes until brown and bubbly.
Serve with Ice Cream.
