Thin Mint Cupcakes:
Make your favorite chocolate cupcake recipe.
Once cupcakes have totally cooled, use cupcake plunger or apple corer and remove middle from cupcake.
Fill with Mint Ganache (recipe follows)
Fill pastry bag fitted with decorator tip with mint buttercream/frosting (recipe follows) and pipe onto top of cupcakes.
Sprinkle with chopped thin mint cookies, and a small thin mint cookie wedge.
Mint chocolate Ganache:
1 pound chocolate chips
1 cup heavy cream
1/4 tsp peppermint extract
1 tsp crushed mint cookies
Heat heavy cream on stove top or in microwave in heat proof container.
Pour over chocolate chips and stir until melted.
Stir in peppermint extract and crushed mint cookies. Pour into piping bag to pipe into cupcakes.
Mint Buttercream:
Use your favorite buttercream recipe. Add 1/4 tsp peppermint extract and some of the mint chocolate ganache and beat in mixer until well blended (about 1/8 cup...more or less to you own taste) Add green food coloring if you would like to color frosting green.
