Pineapple Upside Down Cake
Cakes by Judi

1¼ cups sifted flour
1¼ teaspoons baking powder
¼ cup (½ stick) softened butter
¾ cup sugar
1 beaten egg
½ cup milk
¼ cup (½ stick) softened butter
1 cup packed brown sugar
1 can (20 ounces) sliced pineapple, drained
Cherries

Sift flour and baking powder together. Beat ¼ cup butter in a mixing bowl. Add the sugar gradually, beating until light and fluffy. Add egg and beat well. Add flour mixture alternately with the milk, beating constantly. Melt ¼ cup butter in cast iron skillet and add brown sugar. Cook until melted, stirring constantly. Arrange the pineapple slices on the skillet. Place a cherry in the center of each pineapple slice. Pour the batter over the top. Bake at 350 degrees for 30 minutes. Invert onto a cake plate. May substitute peaches or apricots for the pineapple.
